Boil potatoes until fork tender (about 25-30 min). Drain water from pan. With hand masher, mash to begin, just to get the slices ready to mash.
Add 1/2 butter/margarine and salt (and pepper if desired) and use hand mixer on high speed and begin to mash. Add 1/2 milk and continue to mash until all lumps are gone. Add rest of butter and mash until fluffy. If too stiff add a little more milk and continue to mash until fluffy. (Avoid adding too much milk as it will make the potatoes runny so add gradually until you get the consistency you desire).
Remove to serving bowl, garnish with pat of butter and few parsley flakes. Serve hot.
