Homemade Egg Noodles

Original recipe yields 1 serving
2 cups all-purpose flour, divided
½ teaspoon salt
3 eggs, beaten
1/3 cup water
1 teaspoon cooking or olive oil

In large bowl stir together 1 3/4 cups flour and 1/2 teaspoon salt. (Grandma always did this on the counter on waxed paper.) In a small bowl, beat eggs. Add water and oil. Make a well in the flour mixture and egg mixture into the middle of well. Mix well.

Sprinkle a clean kneading surface with remaining flour. Knead dough until smooth. Roll out to about 1/8” thick. Dust flour over noodles (can let stand, but I didn’t). Roll dough into a roll and cut into stripes. Separate and let dry about an hour.

Drop into boiling chicken broth (I added potato water into broth). Cook covered around 30 minutes or until rest of meal is ready.
