1 1/2 cups powdered sugar, plus additional for glaze
1 1/4 cups butter, softened
1 tsp peppermint extract
1 tsp pure vanilla
3 cups unbleached all-purpose flour
1 tbs p. baking powder
1/2 tsp salt
1/2 cup peppermint candy, finely crushed
Granulated sugar to coat
1 1/2 cups powdered sugar
2 Tbsp milk

Let's Make It
Preheat oven to 350 degrees F. In large mixing bowl, combine powdered sugar, butter, peppermint extract, vanilla, and egg. Beat at medium speed, scraping bowl often, until creamy (2-3 minutes). Reduce speed to low; add flour, baking powder, and salt. Beat, scraping bowl often, until well mixed (1-2 minutes). By hand, stir in peppermint 1/2 cup of peppermint candy.
Shape dough into 3/4" balls; roll in granulated sugar. Place 1" apart on cookie sheets.
Bake for 10-12 minutes or until set. Cool completely.
For glaze: In small mixing bowl, combine powdered sugar and enough milk for desired glazing consistency. Drizzle over cookies; immediately sprinkle with candy, if desired.
