Beat the eggs in a bowl large enough to place chicken in. Dip each chicken strip in the egg, and then dredge through Italian bread crumbs.
Place oil in 12" pan with stove on med-high. After all chicken strips are covered in breadcrumbs, place in hot oil in skillet and brown each side, 4-5 minutes.
Once all chicken strips are browned, add white wine directly into pan. Turn heat onto high so that alcohol cooks out. Add additional bread crumbs until the wine thickens into a sauce.
