5 lb ground chuck
5 Tbsp tender quick salt
2 1/2 tsp mustard seeds
2 1/2 tsp garlic powder
2 1/2 tsp cracked black pepper
1 tsp hickory salt
1 tsp liquid smoke

Mix all ingredients. Refrigerate in covered bowl. Mix once a day for 3 days.

On the 4th day, shape into 3 rolls each 1 foot long.

Bake in broiler pan 4 hours at 150 degrees F. Turn rolls over and bake 4 more hours. Cool and wrap in foil. Slice thinly for serving.
