Easy Broccoli Cheese Quiche

Original recipe yields 1 serving
1 cup pancake mix
1 1/2 cup milk
3 eggs
2 Tbsp butter or margarine
1/2 cup chopped broccoli or frozen thawed spinach
3/4 cup grated cheese (cheddar, Colby Jack…)

Lightly spray glass pie dish or 9x9 square pan with cooking spray. In a large bowl combine pancake mix, milk, eggs and butter.

Layer broccoli first in pan then pour mixture on top. Make sure all veggies are covered in batter so that they don't burn. Sprinkle cheese across the top.

Bake at 350 degrees F for about 40 minutes or until the sides are golden brown.
