1/2 bag baby leaf spinach

4 slices cheese (provolone, Swiss, Muenster…)

Remove stems and scoop out mushroom gills with a spoon and cut into strips.

Heat oil in a medium skillet on medium heat and saute mushrooms, garlic, and red pepper flakes. Add spinach last and cook everything until soft and wilted down.

Place sauteed mixtures onto toasted English muffins and top with cheese, sprouts, avocado and mayo.
