In a stock pot put chicken to cook with water, onion, and salt. After chicken is cooked take chicken out of pot saving the stock.
In a separate pan, put in a couple of teaspoons of oil and put the two slices of bread to toast. After toasting bread take out and put in blender with some stock and puree mixture.
Next, stir fry the tomato, chili, onion, and peanut butter until they are caramelized. Then put in the mole to fry for about 10 minutes.
Pour in the puree and chicken stock until a smooth consistence. Put in chicken and let simmer for about 10 minutes. Serve hot.
