Original recipe yields 1 serving
4 medium size yams (prefer yams instead sweet potatoes - about 3 lb.)
1/2 cup butter
1 cup sugar
1/2 cup brown sugar
1 tsp vanilla extract
1 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp allspice
1/4 cup orange juice
1/2 cup evaporated milk
2 large eggs
1 small can crushed pineapple

Preheat oven to 350°F. Spray a 2 quart casserole dish with nonstick spray. Peel skin from yams and boil about 45 minutes or until fork tender. Drain yams in a colander to remove excess water.

In a large bowl using an electric mixer; mix yams and butter until fluffy consistency. Add sugars, vanilla extract and spices; until well blended. Next mix in the orange juice and evaporated milk until well combined. Add eggs and mix until blended. Fold in the crushed pineapples. Pour into casserole dish.

Bake 50-60 minutes or until center is set.
