1 cup crushed pineapple, drained
2 1/2 cups grated carrots
1/2 cup walnuts
3 1/2 oz coconut (optional)

Combine dry ingredients. Add oil, eggs and mix thoroughly. Drain pineapple and add with remaining ingredients to batter.
Pour into a greased 9 x 13 inch pan or 3, 9-inch layers.
Bake at 350 degrees F for 35 - 40 minutes. Frost with cream cheese frosting.
