1 green bell pepper
4 medium potatoes, washed, peeled and diced
1/4 teaspoon flaked red pepper (optional)

In large skillet, heat oil. Add onions and bell pepper. Cook till they start getting soft.

Add the diced potatoes, cover on medium heat for about 10 minutes.

Remove lid, stir, and turn up heat to brown potatoes. Serve with eggs or in a breakfast burrito.
