Original recipe yields 1 serving
1 lg. onion, coarsely chopped
1/4 cup rub of your choice
2 lb boneless chicken breast, coarsely chopped
2 lb pork butt, coarsely chopped
1 can (28 oz.) tomatoes; or 4-6 whole chopped
2 carrots, peeled and shredded
5 med potatoes, peeled and chopped
1 bottle BBQ sauce

In 12 qt stock pot saute onions in oil until translucent, then add rub and stir until well blended. Add chicken and pork and saute 5-7 min on medium heat.

Add water to cover (approx. 1/2 gallon), then add tomatoes. Bring to boil and add carrots.

Cook until tomatoes start to break up, then add potatoes. Cook until potatoes have broken down, and then add BBQ sauce. Serve over hot rice.
