Black Eyed Pea Spicy Soup

Original recipe yields 1 serving
5 slices bacon, cut in small pieces
1 cup onion, medium, chopped
2 tablespoons jalapenos, finely chopped
2 cups tomatoes, medium, chopped
1 clove fresh garlic, minced
Pinch of salt
Dash of black pepper
3 cups water
2 beef bouillon cubes
4 cans (16-ounce each) black-eyed peas
3 cups grated Kraft 2% milk sharp cheddar or Swiss cheese

In a saucepan, saute the bacon until lightly browned.

Saute onions, jalapenos, tomatoes, garlic, salt and pepper in the bacon and bacon drippings. Add the water. Dissolve the beef bouillon cubes in the mixture.

Drain juice from the peas and add the peas to the soup. Add the cheese and simmer until the cheese is melted.
