Original recipe yields 1 serving
1/3 cup water
1 tsp salt
2 lb yellow squash, cubed
1/4 cup chopped yellow onion
8 strips crisp cooked bacon, crumbled, divided
1/4 cup butter, melted
1/4 tsp pepper
1 tsp chopped fresh basil
3 slices fresh bread, cubed
3/4 cup shredded sharp cheddar cheese
1 cup sour cream

Let's Make It

In a 2 quart dish, place water, salt, squash & onion. Cover and microwave on high for 12 - 15 minutes. Drain well & mash.

To squash add half of the crumbled bacon, butter, pepper, basil, cubed bread, cheese & sour cream. Mix well & place in a 2 quart casserole. Top with remaining crumbled bacon.

Bake at 350 degrees F for 20 - 25 minutes.
