Bring the water to a boil, and add the olive oil, salt, pepper and grits. Reduce heat to low. Stir with a wooden spoon approximately 10 minutes.
Add the blue cheese, and stir 5 minutes. Add the saffron, and stir 1 minute.
Turn off the heat, and cover for 5 minutes.
