1 stalk celery, chopped fine
1 cup onions, chopped fine
1/2 cup bell pepper, chopped
2 cloves garlic, pressed
Fresh parsley
3 chopped green onions
1/2 stick butter
1/4 cup flour
2 cups whole milk
2 egg yolks, beaten
1 tsp salt
1/4 tsp fresh ground black pepper
1/2 tsp cayenne pepper
1/2 pound Swiss cheese
1 pound lump crab meat

Saute vegetables in butter until well done, but not brown.

Blend in flour well into mixture. Pour in milk gradually, stirring constantly. Add egg yolks, salt and peppers and cook for 5 minutes. Add crab meat and grated cheese.

Bake at 350 deg. F for 30 minutes.
