2 Tbsp extra virgin olive oil
1 clove garlic, minced
1/2 small shallot, diced
1 can (6 oz.) hollandaise sauce
3/4 cup dry white wine (such as pinot grigio)
1 pinch saffron

Place olive oil in a sauce pan on medium high heat. Add garlic and shallot and cook until translucent (about 2 minutes). Add hollandaise and reduce heat to simmer for 3 minutes.

Add wine and whisk continuously for 3 minutes.

Stir in saffron and simmer for 3 more minutes. Serve hot.
