1 lg. beef tenderloin roast, fat trimmed off
2 Tbsp minced garlic
Salt and pepper to taste
1 cup water
1 bag (5 lb.) red potatoes, quartered and skin left on
1 med sized bag baby carrots

Place beef roast in crock-pot or slow cooker, turn on high, and rub the 2 Tbsp. of garlic on the outside of roast. Season to taste with salt and pepper.

Let cook for about six hours.

Add 1 cup of water, all the quartered potatoes, and bag of carrots. Let cook til pot roast, carrots, and potatoes are tender.
