2 lb rib eye trimmed in 1/2" cubes (or chuck steak)
2 Tbsp olive oil
4 fresh jalapenos, seeds and membranes removed
1 med onion, chopped
2 garlic cloves, minced
6 can ned tomatillos
1 can (8 oz.) tomato sauce
3 cups beef broth
5 Tbsp fresh cilantro, chopped
1.5 Tbsp paprika
2.5 Tbsp ground cumin
3 Roma tomatoes, coarsely chopped
6 oz beer

Brown beef in hot oil in cast iron skillet. Add jalapenos, onion, garlic & saute.

Add remaining ingredients & seasonings and bring to a boil.

Reduce heat & simmer 3 hours or until beef is tender, covered for last hour.
