Preheat oven to 425°F. Coat 9x13 baking dish with Pam. Whisk together oil, mustard, paprika, thyme, salt, and pepper in a large bowl. Add potatoes; mix.
Transfer to the baking dish.
Roast for about 15 min. Stir and roast for 15 more. Roast until they are browned and toasty. Check with a fork for doneness. If fork doesn't pierce easily, cover with foil and turn down oven to 400°F and continue to roast.
