Preheat oven to 325 degrees F (165 degrees C). Spray a 9x5 inch loaf pan with non-stick cooking spray. Sprinkle 2 teaspoons sugar in pan and shake to coat bottom.
In a large bowl, blend together the eggs, oil, buttermilk, bananas, and vanilla extract. In a separate bowl, mix together the sugars, flour, baking soda & salt until well combined with no lumps. Slowly add the dry ingredients to the banana mixture and stir until well blended. Stir in chocolate chips or pecans.
Pour into prepared loaf pan and bake for 1 hour and 15 minutes or until a cake tester inserted in the center comes out clean.
