Original recipe yields 1 serving
2 lb pork shoulder, cut like stew meat
Salt, pepper, 1/8 tsp. sugar & onion powder
Bacon grease
1 cup cooked rice
1 can stewed tomatoes or Ro*Tel tomatoes
1/2 cup jalapenos
2 cans black eyed peas

Season meat with salt, pepper, 1/8 tsp. sugar & onion powder. Fry meat in bacon grease. When golden brown add a cup of water & simmer (10 min).

Then add rice, tomatoes, jalapenos & black eyed peas. Stir well.

Then place in the oven at 350 degrees F. I always prepare this dish in a iron skillet. Cover the skillet with foil & bake for 45 minutes.
