2 cans (14 oz. each) artichoke hearts, drained and chopped
1-2 garlic cloves to taste
1/2 tsp white vinegar
1-2 tsp Dijon mustard
1/4 cup mozzarella cheese, grated

Let's Make It
Thaw spinach. Combine mayo, sour cream, parmesan and Monterey Jack cheese. Combine artichoke hearts, garlic, and white vinegar. Mix mayo and spinach mixture together, add Dijon and a dash of black pepper last.
Spoon in greased casserole dish. Cover and chill several hours or overnight. Top with mozzarella.
Bake, covered at 350 degrees F for 50 min. Top with mozzarella cheese and bake an additional 5-10 min until cheese is melted and lightly browned.
