Cheesy Burger and Rice Casserole

Original recipe yields 1 serving
1 pound ground beef
Salt and pepper
2 cups rice cooked according to directions (I do this the night before)
1 package frozen mixed veggies of your choice
1 can cream of mushroom soup
1/4 block Velveeta Cheese, cubed

Preheat oven to 400°F. Brown hamburger meat, seasoning as desired with salt and pepper. Drain.

Spray a 13x9 glass baking dish with nonstick cooking spray. Place all rice in bottom of dish. Add hamburger meat, then frozen veggies, then cream of mushroom soup, then Velveeta to insure that cheese melts down through casserole.

Bake for about 20 min or until cheese is complete melted. Let stand for about 5-10 minutes. Enjoy!
