Preheat over to 375°F. Cream first 4 ingredients together. Add eggs and extract. In a separate bowl, mix the flour, baking soda, cream of tartar & salt. Add slowly to creamed mixture. Add chocolate chips or nuts if desired.
Form dough balls the size of a quarter. Roll in superfine sugar. Place on cookie sheet and flatten slightly with bottom of a glass dipped in sugar. If desired, sprinkle colored sugar on top of cookies.
Bake for 8 to 10 minutes. Do not let edges brown. Cool on rack.
