Original recipe yields 1 serving
1 pkg (10 ounce) instant couscous
1/4 cup olive oil
Juice of 2-3 limes
1 can chick peas, rinsed and drained
1 red pepper, finely diced
1/2 red onion, finely diced
1 medium cucumber, seeded and diced
2 Roma tomatoes, seeded and diced
1/2 cup diced olives (I used Kalamata olives)
1/4 cup diced parsley or cilantro (one handful before dicing)
1 pkg (5 ounce) Kraft Crumbles Feta Cheese
Salt and pepper to taste

Prepare couscous as directed on package.

Mix olive oil and lime juice in large bowl. Add couscous, chick peas, vegetables, and remaining ingredients; mix well. Add salt and pepper to taste.

Cover and refrigerate for two hours to allow flavors to blend.
