Original recipe yields 1 serving
pounds 1 1/2 to 2 ground turkey
2 cups whole wheat flour
2 cups unprocessed oat bran
2 cups shredded cheddar cheese (low/no fat)
4 teaspoon s baking powder
1/2 teaspoon baking soda
1-2 Tablespoons season all and/or accent (to taste/optional)
cups 2 1/2 to 2 3/4 buttermilk (low/no fat)
Topping: Butter and jelly

1. Preheat oven to 450°F. Place muffin cups in pan and lightly spray the muffin cups with cooking spray.

2. Brown turkey in skillet over med-high heat, drain, pat dry and crumble. Combine turkey, flour, oat bran, cheese, baking powder and baking soda, season all and accent (to taste/optional). Slowly add buttermilk and stir until moistened (gooey but not soaked).

3. Drop large spoonfuls into muffin cups.

4. Bake for 15-25 minutes until golden brown. (Test doneness with toothpick or fork-ready when it comes out clean).
