Finely chop onion and mix together with all of the dry ingredients (fork mix). Add beaten eggs and water and fork mix until well blended.
Let stand for 10 minutes to slightly thicken.
On medium heat add 2 tablespoons of the batter to lightly coated non-stick skillet/pan. I used atomized olive oil to coat bottom of pan. A teaspoon of oil wiped across pan should do nicely. Cook until golden brown (about 4-5 minutes per side).
