For each person:
1 pkg baby spinach
2 Tbsp butter
1 tsp nutmeg
2 lg. eggs
2 Tbsp grated Asiago, Parmesan or Romano cheese
1/2 cup half-and-half

Saute baby spinach in butter. Sprinkle nutmeg over spinach.

While spinach is cooking, prepare au gratin dishes by spraying with shortening. When spinach is done, but still bright green, divide between the dishes. Make 2 holes in the spinach and drop 1 egg in each hole, pour half-and-half up to the top of the au gratin dish, sprinkle with cheese (Asiago is the best).

Bake at 375°F for 25 minutes or until eggs are set, but not hard.
