Tilapia Succotash over Rice

1/2 small onion, chopped
3 tsp butter/margarine
3 tilapia fillets, chopped into bite size pieces
1 can Margaret Holmes Triple Succotash
1/2 tsp Adobe seasoning
Salt & pepper to taste
3 cups cooked white rice

Chop onion and cook in butter until onion is translucent.

Add tilapia and saute until barely tan.

Add whole can of succotash and seasoning. Cook until most of the liquid is gone (not dry). Serve over white rice. Serve hot.
