Original recipe yields 1 serving
1 fat free cream cheese
2- cloves garlic, minced
1/3 cup chopped chives
Shredded parmesan cheese
Shredded sharp cheddar cheese
Feta cheese
Shredded mozzarella cheese
Spinach, chopped finely
Salt and pepper to taste
2 large eggs, whipped
1 Tbsp lemon juice
Seasoned bread crumbs
2 large boneless skinless chicken breasts

Mix together all above ingredients EXCEPT for egg, lemon juice, bread crumbs, and chicken and set aside.

Flatten out chicken with a meat tenderizer. Put a spoonful of mixture inside flattened chicken. Fold chicken over to create an envelope and secure with toothpicks. Mix egg and lemon juice. Dip chicken into lemon juice egg mixture. Then coat chicken in bread crumbs. Repeat for each chicken breast.

Place chicken into a baking dish and cover. Bake at 400 degrees F until chicken is cooked thoroughly. Remove toothpicks. Serve. Can garnish with a tomato or creamy sauce.
