Let's Make It
Sort beans and pick over. Place in large soup pot and clean several times until water is clear. Add water to cover (about 3 inches above the beans). Cover and soak overnight.
Add ham hocks and bacon to beans. Add more water to about 1 inch above ham hocks. Add remaining ingredients except cilantro and rice. Cover, bring to a boil, reduce heat and simmer, covered for approx. 1 1/2 hours.
Add cilantro and simmer 1 hour more. Remove ham hocks, trim and debone, placing meat back into the pot. Serve over white rice.
