1 lb meat of your choice (chopped chicken, chopped smoke sausage, peeled and cleaned raw shrimp)
2 cups chicken broth or stock
1 cup chopped celery
1 cup chopped onion
1 can (4 oz.) sliced mushrooms, drained
1 can (14.5 oz.) diced tomatoes with juice
1 can black beans, drained and rinsed
2 large cloves or garlic, minced
2 tablespoons Cajun or Creole seasoning

Preheat oven to 450 degrees F. Chop, rinse, and drain all necessary ingredients.

Pour all ingredients into either a 13x9 glass baking dish or a Dutch oven and mix well.

Place dish in preheated oven uncovered for 30 minutes. Serve over steamed rice.
