Original recipe yields 1 serving
1 Tbsp olive oil
1 Tbsp butter
2 cups long grain rice
3/4 onion, diced
1/2 garlic clove, chopped
2 cans chicken broth
1 cup water
Salt, pepper, garlic powder
1/2 teaspoon chili powder
1 sm can Mex-tomato sauce
1 sm can diced green chili
1 sm can Mex-corn

In a fry pan add oil & butter. Add rice and cook 3 min on med heat. Add onion and cook 2 min. Add garlic and cook 1 min. Then add chicken broth and water. Add salt, pepper, garlic powder, and Mex-tomato sauce. Add chili powder and diced green chili.

Cover and cook 25 min on med heat. Don't

pick up the lid.

Now add Mex-corn, mix and let sit covered 10 more min.
