Sautee diced green pepper and onion in 4 Tbsp. butter in large saute pan until soft. Add flour to form a paste. Whisk in milk and boil one minute. Stir in corn. Add slightly beaten eggs. Fold in cheese.
Remove from heat and place in a 9x13 baking dish. Sautee crushed crackers with 1 Tbsp. butter. Sprinkle mixture on top of corn.
