Original recipe yields 1 serving
4 tablespoons olive oil
1/8 teaspoon sea salt
1/2 pkg firm seasoned tofu
1 tablespoon soy sauce
1 teaspoon chopped ginger root
1 tablespoon garlic
1 escallion/scallion, finely chopped
2 tablespoons roughly chopped onion
1 small head broccoli
1 can Goya black beans
2 tablespoons salsa
1 handful rinsed alfalfa sprout
Dash of cinnamon

Let's Make It
Heat oil in large frying pan. Add salt to oil and stir. Place tofu on paper towel and press with wide knife for 2 min. Cube in bite size pieces add to oil. Add soy sauce. Add ginger, garlic, and escallion. Fry for 8 minutes then turn and fry for 5 more minutes.
Add onions and stir. Chop broccoli and add to mixture. Stir fry for 3 minutes. Rinse and add black beans. Lower heat and let cook uncovered until broccoli is crisp and bright green. Stir in salsa. Add sprout. Add cinnamon. Stir fry until sprouts are wilted.
Remove from heat and serve with brown rice, multigrain pita bread or wheat tortillas.
