Brown ground beef in pan, remove grease. Thinly slice tomatoes, bell peppers and onion into strips. Pour water off can of mushrooms.
Peel and halve large zucchini lengthways and core out all of the center seeds and some of the meat of zucchini. Stuff heaping with hamburger, sliced tomatoes, peppers, onions and mushrooms. Salt and pepper. Wrap fully in tin foil.
Bake at 350°F for 45 minutes and remove. Open foil and layer shredded cheese, rewrap and bake another 15 minutes. Remove and cut each half in two pieces and serve.
