Preheat oven to 350 degrees F. In a large bowl beat the sugar and butter with mixer on med. speed until well blended. Add eggs and coconut extract and until light and fluffy. Add flour, baking powder and salt on low speed until a solid dough forms, then mix in walnuts.
Ball the dough into a little larger than 1 in balls. Take a pinch of coconut and press it onto the top of each ball of dough, then place 2 inches apart on aluminum foil covered baking sheets.
Bake 14 minutes until brown around the edges. Let cool for 2-3 minutes.
