4 large sweet onions, thinly sliced and separated into rings

1 container (32 oz.) beef flavored culinary stock
2 cups water

Saute prepared onions in butter in a Dutch oven over medium heat until the onions are tender. Slowly add beef broth, water and pepper. Bring to a boil, reduce heat, and simmer uncovered for about 15 min.
Place 8 ovenproof bowls on a baking sheet. Place one slice of bread in each bowl. Ladle soup over bread. Top with one cheese slice. Sprinkle with parmesan cheese.
Broil 5 1/2 inches from heat until cheese melts.
