Original recipe yields 1 serving
1 lb pasta (any kind you like)
2 tablespoons EVOO (Extra Virgin Olive Oil
3 large chicken breasts
1 large onion
2 tablespoons chopped garlic
Salt and pepper to taste
1 tablespoon thyme
1/2 lb broccoli
1/2 head cauliflower
1 lb Velveeta Cheese
1/2 lb shredded Colby and Monterey jack cheese
1/2 cup bread crumbs

Boil water and add noodles to cook. In saute pan heat EVOO. Cube chicken breasts into bite size pieces and brown. Add onion and garlic. Add some salt, pepper and thyme.

Chop broccoli and cauliflower into small bite size pieces and add to noodles in water (why dirty up another pan when you can cook both the veggies and pasta in the same pot). Don't add veggies until about 5 min before pasta is ready. Drain pasta and veggies slightly al dente and veggies with a bite.

Next, mix all ingredients together in pasta pot, chicken, pasta, veggies and Velveeta Cheese until well blended.

Put mixture into a baking pan about and inch deep, top with shredded cheese and bread crumbs. Broil until golden brown and serve!!
