Combine ingredients to make Garlic Rosemary Rub. Rub all over chicken. Preheat oven to 425 degrees F.
Stuff chicken with onion and 3 sprigs rosemary. Put 1 sprig rosemary under the skin on each breast. Put chicken on a rack in a 11x7 pan.
Roast for 15 minutes, then reduce temperature to 350 degrees F. Roast for 2 hours, then increase temperature to 425 degrees F for the last 10 minutes. Baste a few times with juices while roasting.
