Crush 2 packages graham crackers. Soften stick of butter in microwave. Add butter and cinnamon to graham crackers and mix. Put in spring pan and form it to the sides of pan. Set to the side.
Soften the cream cheeses in microwave and put in bowl. Add eggs one at a time, 1 tsp. vanilla, and 1 cup of sugar. Mix together and pour in crust.
Put in oven on 425°F for 20-30 min. (Look in notes for tip.)
Meanwhile in a bowl, mix the sour cream, 3 tablespoons of sugar, and 1 tsp. of vanilla. When you take the cake out of the oven, pour this on top and stick back in oven on 500°F for about 5 min. Let cool and refrigerate overnight.
