1 cup buttermilk
1 cup quick oats
1 cup flour
1 cup flax seed, ground
1/2 tsp baking soda
2 tsp baking powder
1/2 tsp salt
3/4 cup packed brown sugar
1 egg, beaten
1/2 cup applesauce
1 tsp vanilla
1/2 tsp cinnamon
1 cup chocolate chips

Combine buttermilk and oats set aside. Preheat oven to 375 degrees F. Combine dry ingredients; flour, flax, baking soda, baking powder, and salt, stir to combine. In mixing bowl, cream together sugar, egg, applesauce, vanilla, and cinnamon. Stir in oatmeal-buttermilk mixture. Add dry ingredients, stir until moistened. Add chocolate chips

Fill greased muffin tins 3/4 full.

Bake for 15 minutes, until springs-back when touched in center or edges are lightly browned.
