Original recipe yields 1 serving
1 1/2 cups flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/4 tsp clove
1/2 cinnamon
1/4 tsp nutmeg
1 cup sugar (try ½-cup brown)
3/4 cup pumpkin
1/4 cup oil
2 eggs
3/4 cup raisins (optional)
1/2 cup nuts (optional)
1 cup white chocolate chips (optional)

Preheat oven to 400 degrees F. Mix flour, baking powder, baking soda, salt, clove, cinnamon, nutmeg and sugar together in a large mixing bowl. In a separate bowl, mix pumpkin, oil and eggs. Pour liquid mixture into flour mixture and fold in the extras of your choice.

Spoon into greased muffin pan until each cup is about half way full (since your muffins will rise).

Pop muffins in the oven and bake for about 18 minutes or until cooked (one way to know if muffins are fully cooked is by sticking a knife into the center of a muffin, if it comes out clean your muffin is cooked!). Finally the most important step, eat and enjoy!
