Moist Coconut Cake

Original recipe yields 1 serving
1 box coconut cook and serve pudding mix
1 cup coconut milk
1 cup evaporated milk
1 box white cake mix
4 egg whites
1/3 cup canola or vegetable oil
1 tablespoon coconut extract, divided
1/2 cup flaked coconut, divided
1 container prepared white frosting

1. Preheat oven to 350°F, 325°F if glass. Grease a springform pan. In a saucepan combine pudding mix, coconut milk and evaporated milk, cook according to package directions. In a large bowl combine cake mix, egg whites, oil, 2 tsp. coconut extract, 1/4 cup flaked coconut and pudding. Blend by hand 2 minutes, batter may be lumpy.

2. Pour into greased pan.

3. Cook approx. 40 minutes or until golden brown and center springs backed when pushed down. Allow cake to cool. Mix 1 tsp. of coconut extract into frosting. Frost entire cake. Top with 1/4 cup of flaked coconut.
