Original recipe yields 1 serving
1 package Good Seasons Italian Dressing mix
1/4 cup white balsamic vinegar
3 Tbsp water
1/2 cup olive oil
1 zucchini, sliced into 1/2" rounds
1 yellow summer squash, sliced into 1/2" rounds
1 Vidalia onion, quartered then separated
4 portobello mushrooms, quartered
1 green bell pepper, cut into 1 1/2" cubes
1 red bell pepper, cut into 1 1/2" cubes
1 yellow bell pepper, cut into 1 1/2" cubes
6 (12") wooden skewers soaked in water

1. In a container with a lid combine Italian dressing mix, water and white balsamic vinegar. Shake well. Add olive oil and shake well.

2. In a large pot bring 1 gallon of water to a boil. Add all veggies except mushrooms. Parboil for 2 minutes. Drain water.

3. Place veggies in a large bowl. Pour dressing over veggies. Allow to marinate 30 minute or overnight.

4. Divide veggies evenly onto skewers. Grill veggie kabobs on grill for 15 minutes or until desired doneness.
