Original recipe yields 1 serving
3 green peppers, diced
2 red peppers, diced
3 onions, diced
1/2 cup garlic, minced
1 - 1 1/2 lb Italian sausage
1 #10 can (3 quarts) diced tomatoes
2 cans tomato paste
2 tablespoons red pepper flake
1/2 -2/3 cup basil
1/2-2/3 cup oregano
1/4 cup rosemary
1/4 cup fennel seed
1 quart water
1/4 cup sugar

Combine peppers, onion, garlic and sausage and saute in big sauce pot until sausage is done.

Add other ingredients and simmer 6-8 hours stirring.

Refrigerate overnight. Bring back up to heat slowly. Pour over favorite pasta.
