4 Portobello mushrooms
Olive oil
1 roll breakfast sausage
1 medium onion, finely chopped
1 tsp Italian seasoning
8 oz Velveeta

Clean out the gills on the mushrooms, and remove the stems. Sprinkle the mushrooms with olive oil. Broil the mushrooms for 5 minutes.

Brown the breakfast sausage with the chopped onion. Drain off the fat. Add the Italian seasoning. Add the Velveeta and stir until the cheese melts.

Fill the mushroom caps with the sausage mixture. Return the mushrooms to the broiler for an additional 5 minutes.
