Overnight Slaw

Original recipe yields 1 serving
2 bag s slaw mix or 1 head of green cabbage, shredded
(alternately, 1 bag of slaw mix and a bag of broccoli slaw)
1 1/2 cups shredded purple cabbage (optional)
1 green or red bell pepper
2 carrots, shredded (if none in mix)
1 sm red onion
1 cup plus 2 tsp. sugar, divided
1 tsp dry mustard
1 Tbsp celery seed
1 Tbsp salt
1 cup red wine vinegar
3/4 cup vegetable oil

Place cabbage, peppers, and carrots in a large bowl. Pour 1 cup of sugar over mix and stir. Let sit while the dressing is made.

For the dressing, combine all other ingredients in heavy sauce pan. Bring just to a boil, stir, and then pour over cabbage mixture, stir again.

Cover with plastic wrap and put in refrigerator overnight. Stir once or twice while sitting.
