Salad Ingredients
9 ounces orzo pasta, (1 1/3 cups) cooked and rinsed with cold water
1 can (14.5 ounce) whole kernel corn, drained
1 can (15 ounce) black beans, drained and rinsed
1 cup shredded Mexican blend cheese
1 cup chopped green bell pepper
2 green onions, sliced thin
2 cans (14.5 ounce each) Red Gold® Petite Diced Tomatoes Mexican Fiesta, drained or 2 cans (14.5 ounce each) Red Gold® Petite Diced Tomatoes with Green Chilies, drained
Dressing Ingredients
1/4 cup chopped fresh cilantro
1/4 cup mayonnaise
1/4 cup low fat sour cream
Salt and black pepper to taste
